Instructions
- Preheat your oven to 180°C (350°F), and prepare a cake tin or muffin tray.
- Grate 2 large (210g) carrots.
- Add 120ml milk of choice, 2 eggs, 2 tsp oil into a large mixing bowl, and stir until smooth and creamy.

- Add the sachet of baking mix and grated carrots, fold together until well combined.
- Pour into a greased cake tin and bake for 30 minutes.
- Allow to cool before slicing and serving.
Notes
Chopped nuts & raisins are great add-ins!
