Ingredients

Instructions

  1. Preheat your oven to 180°C (350°F), and prepare a cake tin or muffin tray.
  2. Grate 2 large (210g) carrots.
  3. Add 120ml milk of choice, 2 eggs, 2 tsp oil into a large mixing bowl, and stir until smooth and creamy.
    1. Add the sachet of baking mix and grated carrots, fold together until well combined.
  4. Pour into a greased cake tin and bake for 30 minutes.
  5. Allow to cool before slicing and serving.

Notes

Chopped nuts & raisins are great add-ins!
